Rapid Methods for Meat Microbiology

چکیده

Rapid Methods and Automation in Microbiology are dynamic fields of study that address the utilization of microbiological, chemical, biochemical, biophysical, immunological and serological methods for the study of improving isolation, early detection, characterization and enumeration of microorganisms and their products in clinical, food, industrial and environmental samples. This overview provides a brief perspective of the development of rapid methods from conventional methods to miniaturized methods and to modern technologies for meat microbiological analysis.

Three rapid methods (spot test, disk, and tube) for detecting urease production in anaerobic bacteria yielded results faster than the conventional method. The results were more consistent with the disk and tube methods than with the spot test. Blood agar plate growth gave more consistent results than growth from chopped-meat slants.
